CHARCUTERIE DISPLAY
(Served During Social Hour 5:30pm-6:30pm)
This elegant and impressive charcuterie display is set to overtake our elegant conference center foyer. This beautiful space is noted for its vaulted, beam ceiling and stone fireplace. Decorated for the holidays, this is the perfect setting to begin your journey of the tastebuds!
The charcuterie display will feature four regional smoked meats, two game sausages, Lake Superior smoked trout and salmon, three local cheeses, pear chutney, caramelized onion marmalade, and hot sauce. Served with baguette, bread, and crackers.

Artichoke Spinach Smoked Salmon Roast Pepper & Sweet Onion
Smoked Duck Jambalaya – Highly seasoned, simmered with Tasso Ham, peppers, and tomatoes. Served with rice.
Shrimp Etouffee – Smothered in a rich dark roux sauce.
Blacked Walleye – Lightly seasoned with our own Cajun rub, seared and swimming in its natural juices.
MAIN BUFFET
(Seating at 6:30pm. Dinner served 7:00pm-8:30pm)
Cornish Game Hen, split – Marinated, grilled over fire, red wine gravy with wild rice and bread stuffing.
Salt & Pepper Prime Rib Beef, with pan roasted au jus – Rubbed, marinated overnight, slow-roasted, sliced thin and severed with buns and creamy horseradish.
Chicken Thighs Picatta – White wine butter sauce with capers, lemon, and parsley.

Fresh Vegetable Ragout – Seasonal vegetables tossed with our Roast Pepper Ragout, lemon and garlic.
Garlic Smashed Potato – Russet potato with cream, butter, and roast garlic.
Wild Rice Pilaf – Cooked the northern way.
